A suggestion:
Win Rate percentage doesn’t seem to be a good indicator for difficulty since most players will just play more conservatively with better players after a couple of failed attempts.
Perhaps include an average time to win in addition to or in place of win rate. This may be a better indicator since it accounts for conservative playing.

Better yet, average number of hands (hands not bets). Should be more accurate than time to win.
